Recipe: Shepherd’s Pie | Sound Shore Moms of Westchester

“There are only two kinds of people in the world, the Irish and those who wish they were.”  Irish proverb

I wish I were Irish for one reason: Shepherd’s Pie.  Celebrate the upcoming holiday with this simple, quick Shepherd’s Pie Recipe that kid’s love too!  And don’t forget the green beer.

Ingredients: 

1 pound ground beef (grass fed!)

⅓ cup ketchup

1 teaspoon Worcestershire sauce

8 ounces frozen mixed vegetables (such as carrots, peas, and corn), thawed

¼ cup (1 ounce) shredded Cheddar (optional)

1 16-ounce package mashed potatoes, refrigerated or frozen and thawed


Instructions:

Heat oven to 400° F.

Place beef in a large pan and cook over medium-high heat with no trace of pink, about 5 mins.

Spoon off and discard fat. Stir in ketchup and Worcestershire. Add the vegetables and stir for 1 minute. Transfer to a baking dish.

Mix the cheese (if desired) with the potatoes in a bowl. Spread over the beef and bake until heated through, 10 minutes.
